WHEATBERRY SALAD -- mmmmm

My dear friend, Susan, served this salad at a party, and I couldn’t get enough of it.

I served it last week for dinner with girlfriends alongside homemade new potato salad, hummus & pita, and caprese salad.  All the girls raved over the cool Summer meal.

So, by popular demand, here is the recipe for “all y’all” good folks dealing with the summer heat & looking for something delicious.

Wheatberry Salad a la Susan (with variations)

1 cup wheatberries (you can get them in Whole Foods bulk section)
2 1/4 cups water

Bring water to boil in a 1 1/2 c saucepan.
Add the grain.
Reduce heat; simmer, covered for 1 1/2 – 2 hours or until water is absorbed.
Stir lightly to fluff (adding salt to taste, if desired.
Let stand for 5 minutes (let them cool for the salad)

Add:

chopped walnuts
chopped green onions
dried cranberries (or other dried fruit such as goji berries, dried cherries)
feta cheese
fresh parsley or mint or basil (if you add basil, then add a little garlic…mmm)

Whisk together a teensy bit of olive oil and lemon juice to taste and toss it all together.  Voila!
