On a recent trip to North Georgia, I got a peck of fresh peaches.  Even after sharing some with friends, a peck of peaches is a lot for one couple to eat.

In my search for creative uses for fresh, summer peaches, I came across this delicious arugula salad with fresh peaches.  We made the salad last night — perfect!

The sweetness of the peaches compliments he peppery-flavor of the arugula greens beautifully.  The goat cheese and nuts are an extra compliment.

We had an avocado that needed to be eaten, so I added that too.

A wonderful dinner salad!
